Chinese take-out in the South End shut for health violations

A city health inspector has ordered the shutdown of the prepared food section at New York Mart (the old Ming's), 1102 Washington St., until managers fix several violations found in an inspection last week.
According to the inspector's report, cooked chicken and pork were both being stored at 110 degrees, when they should have been at least 140. The inspector also noted heavy grease and soil buildups throughout the kitchen area, including in the hood over the cooking area.

Crisis averted with the
Crisis averted with the grease build-up write-up. There was an horrific fire several years ago in West Roxbury that was started by grease build-up. Two firemen will killed.

You are correct. Every time I read about a violation for grease build-up in the ventilation I always know that they paid special attention to that after the fire (and deaths) at China Gold.

Two Boston firefighters were killed and at least 11 others were injured Wednesday night as flames rushed through a restaurant in West Roxbury, collapsing the roof and trapping crews inside, public safety officials said.
The two veteran firefighters who died, Paul J. Cahill, 55, of Scituate and Warren J. Payne, 53, of Canton, were identified by the officials and a firefighter on the scene. They were the first deaths of firefighters in a fire since 1994.
Cahill and Payne both were assigned to the West Roxbury fire house on Centre Street, headquarters of Engine 30, Ladder 25.

The proprietors of this particular restaurant deserved
The Proprietors of this particular restaurant deserved to be shut down for health and sanitation violations. They should've known the dangers of keeping raw meat and/or poultry at improper temperatures prior to cooking, and allowing grease to build up. One's a real public health hazard, and the other's a real public safety hazard, if one gets the drift.
Here's hoping they're given a choice of either cleaning up their act once and for all, or being forced out of business permanently.

It was cooked meat that was stored at 110F. Not to defend the establishment.
