In Dorchester there are a ton of pho places and none of them have punny names. I think that only applies to the pho joints that expand out to the land of the big noses (Vietnamese slur for white people I've been told).

I'm pretty sure the hyphen is a relatively new addition to the name, and it wouldn't surprise me if they just got tired of jokes about the original, unhyphenated version.
