No, no no! The villain must either 1) gas the clerk, laser blind the cameras, rip off his rubber mask, and blend into the crowd, 2) palm the ring, substitute a clever fake and blend into the crowd or 3) pull out a four foot long machine gun/rocket launcher/grenade lobber and kill everyone in the crowd. None of this running off like a pussy leaving fingerprints and DNA and eyewitnesses. I am afraid that the League of Calamitous Intent is rejecting your application for membership. Good day, sir.

If a mall jewelry store hands over a $110K ring to any random yahoo who walks in... I think much of that $110K must be overhead for their insurance premiums.
